Oh my, it is raining cats and dogs today so we decided to post a recipe and not just any recipe, rain like this calls for a thick and yummy French onion soup! PERFECT!
OK, so here goes:
SOUP
1 1/2 lbs onions, thinly sliced
2 cloves crushed garlic
2oz butter
2 tblsps oil
1/2 tsp sugar
2 pints beef stock (says good beef stock but we are not going to be boiling bones ..... Campbells!)
10 fl oz dry white wine (with additional 10 fl oz for the Chef)
salt and pepper
CROUTONS
French bread
Butter
8oz Gruyere cheese (think that Mozzarella with work the same if you don't have a good cheese store)
OK this is how to create this masterpiece! You can make this in six individual bowls or one big dish but remember they must be fireproof as you will be putting them under the broiler to finish them off.
In large pan, heat butter and oil. Add garlic, onion and sugar and cook over low heat for around 30 minutes, stirring occasionally, until caramelized. Add stock and wine and bring to boil. Simmer covered over low heat for about an hour. Season. Ladle into bowl(s) and place french bread croutons on top. Smother with grated cheese and place under broiler until cheese is bubbling! Eat and enjoy!
